Dizzy Pig Barbecue Rub "Jamaican Firewalk"
"JERK" is traditionally a wet marinade with fresh scallions, ginger, allspice, soy sauce, and some of the hottest peppers in the world. Duplicating this is impossible with a dry rub. We haven't liked any of the dry jerk seasonings out there, so we made our own by balancing the unique but potent flavors of the Jamaican allspice with ginger, citrus, scallions, and plenty of heat. Best on shrimp, chicken, pork, and fish. ( High heat level)
